What a lovely Fall day! Halloween is tomorrow and trick-or-treating in our neighborhood was this afternoon. The costumes were awesome this year and the jokes weren’t half bad. I am surprised we had enough candy to pass out this year, as I was eating most of it on the days leading up to today…I just can’t get enough sugar this time of year! Besides candy for breakfast, I made curried pumpkin pancakes to fill up our bellies in this cool weather!
I love pancakes; however, as a kid I didn’t care for them much. I used to prefer salty breakfast choices over sweet treats, including, eggs, bacon, toast, etc… These were more my style; however, I’ve grown to love sweet breakfast choices, including pancakes, french toast, and waffles. This meal is a wonderful sweet treat, especially on these cold Fall weekends!
Pumpkin pancakes are a Fall staple, as pumpkin flavored food/drinks are everywhere. I wanted to switch things up a bit with this pumpkin craze and in addition add some curry powder. The curry taste is mild but great stacked up against the pumpkin (you’re welcome for the awesome pun).
This is the perfect breakfast or brunch for any Fall weekend! You could easily serve them for “brinner” as well!
